Determination of iron content present in Beta vulgaris and Amaranthus dubius in Mwanza city, Tanzania

Abstract:
Background: Iron is a natural occurring mineral; it is found in various foods including meat and vegetables. Deficiency of iron in the body leads to Anaemia. Consumption of iron rich foods such as meat and vegetables in a right proportion can help in prevention of iron deficiency anaemia. Vegetables such as Beta vulgaris and Amaranthus dubius are among rich sources of iron however the amount of most micronutrients in vegetables including iron vary depending on the location of cultivation of the vegetables.
Methods: The study was a laboratory experiment analysis conducted at CUHAS medicinal chemistry laboratory in Mwanza, and data was collected from 8th April 2023 to 1st May 2023 in which 9 samples of Beta vulgaris and 9 samples of Amaranthus dubius were analysed to determine their iron content by redox titration.
Results and discussion: Iron was present in all nine samples of Amaranthus dubius and all nine samples of Beta vulgaris. The mean iron concentration of iron in Amaranthus dubius from this study is 28.37mg/100g which is higher than mean iron concentration of 18.64mg/100g of a study conducted in Kenya. The concentration of iron in Beta vulgaris was 1.98mg/100g whereby these values are higher than those of a study conducted in India whereby the iron concentration in Beta vulgaris was 0.76mg/100g.
Conclusion: All nine samples of Beta vulgaris and Amaranthus dubius were found to contain iron but of varying concentration, whereby the variation may be attributed by factors such plant factors and soil factors.
