This study aims to investigate the knowledge and practice on food hygiene among food handlers operating at the catholic university of Health and Allied Sciences student cafeteria in Mwanza city. Methodology: A mixed method approach of cross-sectional survey and observational assessment will be used to examine the adherence to food hygiene protocols including hand hygiene, food storage, preparation procedure, knowledge of food hygiene, and overall sanitation practices. Expected output: Findings will indicate the level of compliance with food hygiene among food handlers and notable disparities be encountered during the study. For disparities that will be noticed feedback will be provided to the cafeteria leaders to communicate with their workers to improve food hygiene through training their workers and increasing awareness about the standard of food hygiene practices.

Abstract:

Background: Foodborne diseases are a significant cause of morbidity and mortality worldwide. This study aims to investigate the knowledge and practice on food hygiene among food handlers operating at the catholic university of Health and Allied Sciences student cafeteria in Mwanza city.

Methodology: A mixed method approach of cross-sectional survey and observational assessment will be used to examine the adherence to food hygiene protocols including hand hygiene, food storage, preparation procedure, knowledge of food hygiene, and overall sanitation practices.
